Recipe: Homemade Tandoori Masala Spice Mix

Tandoori Masala is a spice mix that is used as a marinade for roast chicken in Northern Indian and Pakistani cuisine. It's easily available in stores but commercial brands often have gluten and MSG included as additives.

When you make your own tandoori masala spice mix, you're not getting the MSG that is in the store bought product.

The red food coloring that gives Tandoori Masala its rich red color has been emitted from this recipe.  Why not make your own mix for a fraction of the cost? If stored in a tightly sealed jar this spice blend will keep for months. Try it sprinkled over vegetables, soups or salads.

Type of dish: spices, seasonings
Servings: 1 cup
Equipment: large mixing bowl

Ingredients:

  • 1 TB garlic powder
  • 1 TB powdered ginger
  • 1 TB ground cloves
  • 1½ tsp ground nutmeg
  • 1 TB mace
  • 1½ TB ground cumin
  • 6 TB ground coriander
  • 1 TB fenugreek
  • 1 TB ground cardamom
  • 1 TB ground black pepper

Directions:

  1. Mix all ingredients together until well blended.
  2. Store in a tightly sealed jar.

  1. How long would this keep? I made some in Jan 2016 and it got forgotten about in the back of the cupboard. I presume still safe to eat?

  2. This recipe is awesome . How many time needed make this recipe? You tell Mix all ingredients together until well blended and then Store in a tightly sealed jar.

  3. Just curious, I make my own curry powder that includes the ingredients as seeds or corns which are heated first and then ground when cooled, could this be applied here as well?

    • Yes, toasting seeds helps to develop the aroma, just make sure that the seeds don’t start to smoke. 2 minutes on a high heat in a skillet is more than enough.
